there is bleachlike solid in the dishtank but they have commercial dishtanks that reach very high temps. They also have solution that they soak dishes in when they begin to stain. You can add a cap full of bleach to your dishwater and it will help to remove the stains. Most places don’t allow bleach anymore because of the risks of mixing chemicals. I just add bleach to my dishwasher usually a cup and it helps.

They use regular cheap bulk dish-soap, but they have powerful dish-washing machines that clean the dishes with steam and jets of water.

No. Generally the trick is hot (and I mean scalding hot) water. It not only cleans the dishes but sanitizes them as well.

Bleach is used in products like Cascade to get your dishes clean as well as to disinfect them. So it’s not just hotels and restaurants, it’s anyone who has a dishwasher. I use bleach in my dishwater to get stains out, too.
